Kiko knows his mud.
This book is widely praised for being all or mostly all you need to know to build an earth oven. Easy read, although not perfectly organized; you will benefit from reading the whole thing and then returning to the sections you need. I can't comment definitively on the method until I build my oven, and can't comment about the recipes, ditto.
