I wish I for one would start living like it. My favorite holiday of the year is just a few weeks away THANKSGIVING..... 11/18/09 With Thanksgiving a little over a week away two critical factors go into having a safe Thanksgiving. The first being the TEMP. you cook your bird to if you eat Turkey on this holiday I've always been taught that cooking poultry to 165 degrees kills samonella are there different strains now than 20 years ago ? Probaly but I cannot say for sure I'm making an assumption. With that said should you or shouldn't you stuff the Turkey? I'm glad you asked, the two schools of thought if you stuff the Bird the danger zone for bacterial growth is 40 degrees to 140 degrees and the ideal breeding ground is about normal body temp. 98 degrees- 100 degrees. We won't talk today about PH levels but the more acidic you go on the scale the certain bacteria just aren't as happy. If your making a stuffing without dairy & I'm speaking mainly of eggs it is more than safe to stuff your bird & as it roasts the juices will enhance the delicious stuffing that has become a tradition at your families table
